I need some advice on potato salad for my dad's 70th birthday. I'm supposed to bring a side dish, and this year it's potato salad to go with the burgers. I don't make it often, so I'm looking for favorite recipes or any little twists that really make it pop. Also, how do you keep mayo-based salads cold at an outdoor party? I want to make sure no one gets sick. Any tips or ideas would be appreciated. It's making me contemplate just grabbing some store-bought stuff.

Mayo, unless homemade does not spoil easily, that's a myth, read the following link.
Add sweet or dill pickles, it gives it some texture and adds a little twang. Good luck!

I do mine in the German style.
I use mashed potatoes, maybe a few diced and boiled ones for the purists, 4 boiled eggs
per pint of potatoes, 1/2 cup of diced onions, a mixing spoonful each of pimentos, sweet relish, jalapeno relish, crushed black or green olives, a mixing spoon of sour cream, mayo, and mustard to taste. Maybe a bit of dill if I think of it. Sometimes I even add ham cubes.
